I love What I Ate Todays. It’s a great way to find new recipes that you know people actually enjoy, and you know aren’t Gordon Ramsey style recipes. (If a recipe has more than ten ingredients and three major steps, no thanks!) So, I decided to give it a go myself.
It’s about this time of year that I end up getting obsessively into fitness and health. I’ve started working out again (Pop Pilates and lifting weights), watching so many documentaries on healthy eating and veganism (Vegucated and Cowspiracy are so good!) and I’ve been trying to eat a wholefood diet. I’m on break with lots of free time so why not?
So, What Did I Eat?
As soon as I wake up I have half a liter of water along with a quarter of a vitamin D tablet. I don’t need a whole tablet plus (to be brutally honest) I’m a cheapo.
For breakfast I had a good old coffee – I use chocolate soy milk and hazelnut flavoured coffee – and wholewheat toast with peanut butter and chia seeds.
For lunch I ate a very ugly wrap (honestly, they take terrible photos). Wholemeal wrap + cherry tomatoes + Sanitarium lentil burger + spinach + carrots + hummus + salsa.
Then for dinner, Coen went to work so I decided to experiment with a new way to make “pizzas”. I’ve seen a lot of YouTubers use leftover wraps as a simple base for pizzas. If you do try to do this I would suggest using a thicker kind of wrap and not to leave an inch for a crunchy “crust” as it easily cooks unevenly.
On top of it I had mushrooms, spinach, zucchini and onion, with a homemade tomato sauce and my own odd recipe for faux cheese! Hummus, almond milk, nutritional yeast, garlic and onion powder and whatever other spices you’d like makes the easiest and fluffiest cheese sauce ever (it must be cooked to work).
Then there were snacks! I drink a lot of coffee, had a banana and have a habit of eating peanut butter out of the jar.
